Easy Roasted Tomato Sauce
/This recipe is perfect for a busy weeknight meal! It is super easy, flavorful, and can be used so many ways.
ingredients
16oz small tomatoes, sliced in half (if using cherry or grape tomatoes, leave them whole)
3 tbsp olive oil
4 whole garlic cloves, peeled
salt & pepper
1 tsp italian seasoning
pinch of crushed red pepper flakes
1/2 C white wine
directions
Preheat oven to 425.
Add 3 tbsp oil to a half sheet pan.
Add tomatoes and garlic cloves to the pan and coat with oil.
Season with salt & pepper, italian seasoning, and crushed red pepper.
Place in oven and roast until tomatoes turn brown and release juices, about 30 min.
Remove from oven, add white wine, and scrape up cooked bits from the pan.
Add to pan on stove, simmer for about 10 minutes.
Using a masher, mash tomatoes until you reach the consistency you want. I like mine a little chunky.
Serve with pasta or any way you use tomato sauce!
